I am so excited to share these homemade peanut butter energy bites! These are all the rage right now, and they taste amazing and are a great healthy snack. Bring them to work for a mid afternoon pick-me-up or post-workout snack.
I made three different flavors: peanut butter oatmeal, white chocolate macadamia nut, and chocolate/peanut butter keto friendly. The recipe I have here is for the peanut butter energy bites, but what I love about this recipe is that you can put whatever you like in them!
Recipe for Peanut Butter Energy Bites:
- 3/4 cup oatmeal
- 1/4 cup coconut
- 1 scoop vanilla protein powder
- 2 tablespoons flax-seed
- 1/8 cup maple syrup
- 1/2 cup peanut butter
The best part? No baking required! Just combine all the ingredients, roll them into bite sized pieces, and keep them in the refrigerator for up to two weeks.
Allergic to peanut butter (or just not a fan)? You can use almond butter, sunflower seed butter, or any other kind of substitute you like. Add some Enjoy Life chocolate chips if you really have a sweet tooth, like me!
Flax-seed is a great source of plant-based protein, omega-3 fats and dietary fiber.
