Luckily, there are lots of healthy, easy to make options. Try this gluten free banana bread recipe that is easy to make and tastes great! You can make it on Sunday night to have for the whole week. It is the perfect on-the-go breakfast to take with me in the morning to work.
Gluten Free Banana Bread – Family Recipe
Makes 1 Loaf
4 large ripe bananas-mushed
1/4 cup melted butter
1 tablespoon sour milk (may use milk of choice and add a drop of vinegar to make it “sour”)
2 tablespoons mayonaise (keeps it moist!)
1 teaspoon baking soda
1 teaspoon baking powder
2 cups gluten free flour (I love Bob’s Red Mill 1-to-1 Gluten Free Baking Flour)
*Beat all ingredients together few one minute.
*Pour into greased and floured loaf pan.
*Bake at 330F for 60-70 minutes (when an inserted toothpick comes out clean).
*Immediately take out of pain to cool and slice.
*Store in refrigerator for up to 5 days.
