Eating healthy doesn’t mean you have to give up the foods you love. You just have to get a little more creative! This cauliflower fried rice is a deliciously healthy swap for regular fried rice. Add a side of edamame, and you’ve got a great Bento box lunch that you can take on the go.
This cauliflower fried rice recipe is grain-free and dairy-free. It can also be made vegan and/or nut free.
Cauliflower Fried Rice Recipe:
1 tablespoon sesame oil
2 cloves garlic, minced
1/2 teaspoon ground ginger
2 cups cauliflower and crumbles
1/2 cup broccoli and onion crumbles (or minced)
1/2 cup chopped broccoli
3 tablespoons egg whites
1 cup shredded cabbage
2 tablespoon gluten-free soy sauce
2 teaspoons natural peanut butter
1/2 ounce peanuts
-Heat the oil in large pan on medium heat, add garlic and cook for 2 minutes.
-Add cauliflower, broccoli, onion crumbles (or minced), as well as the chopped broccoli, and cook on medium heat for 5 minutes.
-Add cabbage to pan and continue cooking for 2 minutes.
-Make a clearing in the center of the pan, add egg white and scramble for 1 minute.
-Add mixture of soy sauce and peanut butter to pan and stir well. Cook for 1 minute.
-Portion fried cauliflower rice into Bento boxes and top with peanuts.
Add side of edamame (as pictured) to make it a great meal to bring to work.
*Can be made vegan by omitting egg.
*Can be made nut free by omitting peanut butter and peanuts.
This cauliflower fried rice is super easy to make and take to work, or if you want to whip something up quick for dinner.
